BILL'S SUMMER MENU REVIEW | EASTBOURNE

I was invited to try Bill's Summer 2019 menu and oh boy is it delicious! From Paprika Chicken to Strawberry Dusted Donuts, Frozen Watermelon & Tequila cocktails and Mango Eaton Mess – there's something for everybody.

On June 26th 2019 I headed to my local Bill's in Eastbourne, East Sussex. I was kindly gifted a three course meal and two drinks (per person for myself and a friend). I decided to bring along my mother and book us in on her birthday.


I have adored Bill's ever since one opened in Eastbourne – gorgeous decor, hospitable staff and the most amazing seasonal food and drink. I just adore Bill's, so as you can imagine, I was incredibly excited about attending my local Bill's restaurant to try their new summer offerings.

My mother and I arrived at around 4:30pm. We was greeted by the friendliest staff as we were seated in a light and airy booth. We decided to start off the evening with a cocktail each – I had a Raspberry and Rose Collins which comprises of Beefeater gin, rose liqueur, raspberry, cloudy apple, lime and soda [£7.75]. My mum had a Pimm's Spritz which comprises of Pimm's, lemonade and prosecco [£7.25]. The cocktails were simply divine – refreshing and light, perfect to kick off our fabulous evening.

We ordered two starters to share: Devilled Chicken Skewers with a spicy barbecue glaze, spring onion, lime and tzatziki [£6.50] and Mini Cumberland Sausages with a honey and grain mustard dip [£4.95]. These starters are delicious – the chicken skewers have a spicy tang while the mini sausages act as the perfect mouth cooler. Two delicious starters that I and my mother would definitely devour again!


The starters were the perfect size to share. Three chicken skewers and five mini sausages – naturally my mother and I halved it all – the serving sizes were perfect and left more than enough room for our main meals.

For our mains we both opted for the new summer dish – Paprika, Garlic and Chilli Roasted Half Chicken [£13.95]. The chicken was served with chips, pea shoots and spicy mayo, finished with an onion, parsley and lemon dressing. The chicken was succulent and flavoursome – you could tell that it had probably been marinated in the paprika, garlic and chilli. The skin was crispy while the chicken remained soft and moist, while the dressing added another dimension of flavour.

The pea shoots were a fresh accompaniment that complimented the chicken perfectly, especially when combined with the spicy mayo.

This main is perfect for summer evenings. Filling but not heavy, indulgent yet still healthy. This meal was absolutely delicious and I would definitely have it again.



For desert we opted for two of the new summer dishes to share – Mango and Passionfruit Eaton Mess which comprised of meringue folded with mango, cream and mango sauce [£6.50] and Warm Strawberry Dusted Doughnuts which were dusted with strawberry sugar and served with fresh strawberries and a warm white chocolate sauce [£6.25].

The Mango and Passionfruit Eaton Mess was delightful, so light and fluffy, creamy and luxurious. This eaton mess rounded the meal off perfectly due to its light nature and refreshing fruity taste.

The Warm Strawberry Dusted Doughnuts were heavenly. Not heavy nor greasy, these little airy doughnuts were truly divine. Sweet, sugary, soft and warm these doughnuts were like little bites of heaven, especially when dipped into the delicious warm white chocolate dip!


We then rounded the evening off with a final cocktail. I opted for another new addition to the Bill's summer menu and went for the Frozen Watermelon Margarita which comprised of AquaRiva blanco tequila, watermelon, lime agave and ginger blended with crushed ice [£7.25]. My mum opted for the Rhubarb Rossini which comprised of strawberry puree and rhubarb liqueur finished with prosecco [£6.75].

The Frozen Watermelon Margarita was so refreshing – I am so glad I ended on this cocktail. Perfect for a summer evening sitting beneath the sunshine, this gorgeous cocktail was a welcomed refresher. The tequila packed a punch while the watermelon soothed and calmed.







Bill's is such a marvellous venue for both food and drink. The atmosphere is always perfect, the staff are always second to none, the food is always cooked to perfection and the drinks are always tantalising!

I highly recommend Bill's. Both my mum and I would rate Bill's, their new summer menu and the overall experience 10/10 – we'd give it more if we could!
