I adore baking... especially around autumn time, oh and Christmas too. Baking brings me so much joy. I love it. I also love gifting off baked goods to loved ones. Many a time my mum and I have carefully packaged a cake and sent it in the post for family members. In today's post, I'll be sharing this incredible sugar cookie recipe with you all. For years my mum and I have tried to perfect our recipe, and last autumn we finally did, so it's only fair I share it with all of you!
These biscuits are super lovely. Beautifully sweet, easy to cut out, super easy to decorate if you desire, and they keep really well too. All you need is...
- 1 cup salted butter
- 1 cup caster sugar
- 1/4 cup of ground almonds
- 1 tsp of vanilla essence/extract/pod
- 1 free range egg (medium)
- 1 tsp of baking powder
- pinch of salt
- 3 cups of plain flour
Then all you need to do is...
Firstly, preheat your oven 180. And then in a bowl cream together your butter, sugar, essence, and ground almonds, before beating in the egg.
Then add in your flour, salt, and baking powder gradually. Once the mixture turns to a dough, turn out the dough onto a floured countertop. Once in a ball of dough, it's time to roll out. I usually divide the dough into two lots before rolling out, so it's a little easier to handle.
Once rolled out, cut into any of your desired shapes. This time we cut out circles, and stamped them with out new stamper (which we are obsessed with, I mean, HOW CUTE!?) – just FYI, it's from TK Maxx, and by the brand: Suck UK.
Once your biscuits are all cut out, and of a similar thickness of 1/4 of an inch, it's now time to bake! Bake at 180/200 for around 10 minutes, but don't let them go golden brown.
Take out when they're done, let them cool, and then they're ready for decoration if need be.
