A naughty but nice treat that is incredibly simple to bake...
My whole life is spent watching what I eat and trying not to eat too much sugary foods but… I just can't resist it when my mum makes a delicious cake or even a batch of some gorgeous cupcakes or even french fancies.

We wanted to bake a cake but we only had two eggs - her usual Victoria Sponge recipe uses 4 eggs - so my mum googled something and this fabulous recipe came up on allrecipes.co.uk. All Recipes is such a fabulous baking site and holds every recipe you will ever need.

We altered Lozzie90's '2 Egg Quick Sponge Mix' recipe to abide with my mums vision of 'Instagram worthy' Fondant Fancies.

Ingredients for cake:

  • 110g Margarine/Butter (we used Clover)
  • 110g Caster Sugar (we used normal sugar)
  • 110g Self-Raising Flour (we used normal flour)
  • 2 Medium Eggs
  • 1 Teaspoon of Baking Powder
Ingredients for decorations:
  • Pink food colouring (or a colour of your choice)
  • Choc chips 
  • 75g of Butter
  • 175g of Icing Sugar
  • Half a box of Icing Sugar
  • Water
Metod:
  1. Preheat oven to 150c/Gas Mark 2
  2. Cream the Butter/Margarine and Sugar together, whisk in the 2 eggs, add the flour and baking powder. Whisk together until smooth.
  3. Grease a square cake tin, lay a sheet of greaseproof paper in the tin and then add the mixture.
  4. Bake in the oven for 30 minutes on 150c/Gas Mark 2, until a golden brown colour.
  5. Cool on a plate or wire rack for 30 minutes to an hour and then cut into 16, 2 inch equal squares (we used a pizza cutter!) Once you have 16 equal squares divide into 8 groups of 2.
  6. To make the buttercream mix together 75g of butter (we used Clover) with 175g of icing sugar. Whisk until smooth.
  7. To make the icing sugar you will need to use half a box of icing sugar mixed with a tiny splash of water, until it's the right consistency that you desire. Add a splash of food colouring - we used PINK!
  8. Blob a bit of buttercream on 8 of the 16 squares of cake and sandwich them together with the other plain squares of cake, then blob one last blob of buttercream on top of each of the 8 sandwiched cakes.
  9. Drizzle over some of the icing sugar to each cake, sprinkle some fancy decorations or choc chips, leave to set and ta-dah - homemade Fondant Fancies!
